Ingredients
- 1 AND 1/2 LBS GROUND BEEF
- 1 LARGE ONION CHOPPED
- 1 CLOVE GARLIC
- 1 tsp SALT
- 1 CAN ORTEGA CHILIES DICED
- 3 TBS CHILI POWDER
- 2 EIGHT OZ TOMATOE SAUCE
- 1 16OZ CAN CREAM CORN
- 2 SMALL CANS SLICED BLACK OLIVES
- 8 CORN TOTTILLAS
- 3/4 CUP GRATTED CHEDDAR CHEESE
Preparation
Step 1
IN LARGE SKILLET, BROWN MEAT, ONION AND GARLIC. ADD ALL INGREDIENTS EXCEPT TOTTILLAS AND CHEESE. USE JUICE FROM ONE CAN OF OLIVES; DRAIN JUICE FROM OTHER CAN. SIMMER FOR 10 MINUTES.
POUR INTO A GREASED 2 QT CASSEROLE. BREAK TOTTILLAS INTO BITE-SIZED PIECES; MIX INTO CASSEROLE. TOP WITH GRATED CHEESE AND BAKE IN 350 DEGREES OVER FOR 30-35 MINUTES. SERVES 6.
