Shrimp Scampi & Linguine
- 3 oz. fresh shrimp
- 1/2 lb. linguine
- 2 tsp. extra virgin olive oil
- 1 Tblsp. chopped onions
- 2 garlic cloves, minced
- 1/2 red and yellow pepper, sliced
- 1 lemon
Peel Shrimp. Cook linguine until al dente. Heat olive oil.
Add onions, garlic and sliced peppers, then saute until tender. Add shrimp and cook until slightly pink. Juice half of the lemon, place over top sauteed items. Toss all ingredients. Place in small bowls. Cut other half of lemon into wedges, and place onto finished product.
