Ingredients

  • 1/4 cup EVOO
  • Several sprigs thyme
  • 1 tbs minced garlic
  • 1 cup sundried tomatoes, chopped
  • 2 tbs. capers, drained
  • 1/2 cup dry white wine
  • 16-24 shrimp
  • S&P

Preparation

Step 1

Preheat broiler. Put oil in large skillet over medium heat and add thyme, garlic, tomatoes & capers. Cook just until mixture sizzles, then add wine, raise heat and bring to a boil. Cook for about 1 minute, then add shrimp, turning them in the sauce.
Put under broiler and cook about 3-5 minutes, turning once. Sprinkle with S&P.
