Cranberry Nut Bread

Ingredients

  • 4 Cups Shifted four
  • 2 Cups sugar
  • 3 tsp Baking powder
  • 1 tsp Baking soda
  • 1 tsp salt
  • 1/2 Cup shortening
  • 1 1/2 Cups Orange Juice
  • 2 Tbsp Grated orange rind
  • 2 Egg (Beaten)
  • 1 Cup Pecans chopped
  • 3 Cups cranberries coarsely chopped

Preparation

Step 1

Sift together flour, sugar, baking, powder soda and salt.

Cut in shortening until mixture resembles cornmeal

Combine orange juice and grated orange rind with well beaten egg.

Pour all at once into dry ingredients while mixing just enough to dampen. Carefully fold in nuts and cranberries.

Spoon into greased loaf pan (9x5x3). And spread corners and sides slightly higher than center.

Bake in moderate oven at 350 for 1 hr until crust is golden brown and inserted toothpick comes out clean.
