Ingredients

  • 2 1/2 c all-purpose flour
  • 1-1/2 c sugar (to taste)
  • 1 T baking powder
  • 7 T vegetable shortening
  • 3 eggs
  • 1 c orange juice
  • 2 T grated orange peel
  • 1/2 c chopped nuts
  • 1/4 c cherry juice (from the canned cherries)
  • 1 (1lb) can tart cherries, well drained & coarsely chopped

Preparation

Step 1

Preheat oven to 350 degrees F.
In lg bowl, combine flour, sugar & baking powder. Cut in shortening. Stir in eggs, orange juice, orange peel & cherry juice. Fold in cherries & nuts. Pour in 2 greased & floured 8- x 4-inch loaf pans. Bake 45 minutes, or until a toothpick inserted in center comes out clean. Cool 10 minutes then remove from pan. Serve warm, or let cool on a wire rack. Can Freeze.
