Apricot Sage Dressing

Ingredients

  • 1/2 stick butter
  • 1 cup chopped celery
  • 1 cup chopped dried apricots
  • 1 load bread
  • 1 chopped onion
  • 1-1/2 tsp dried sage
  • 4 eggs
  • 1-1/2 cups chicken broth

Preparation

Step 1

Trim bread and cut into 1/2 inch cubes and put in a large bowl. Preheat oven to 350 degrees. Butter a 13x9 glass baking dish. Melt butter in a 10 or 12-inch skillet over medium heat. Add onions and celery and saute until they are tender but not brown (about 10 minutes). Add the sage and saute a couple of minutes more. Add to bread cubes. Add the apricots to the mixture and let cool a few minutes. Add the chicken stock and mix well then add the eggs and mix. The bread will absorb most of the broth. Season to taste with salt and pepper. Transfer mixture to buttered dish. Bake stuffing for 1 hour. You can cover with greased parchment paper or if you like a little crunch it can be baked uncovered and will turn golden brown.
