Roast Pork with Thyme/ Judy

Ingredients
- 1 four-pound pork loin
- 3 Tb. olive oil
- 2 Tb. lemon juice
- 1 tsp. thyme
- 1 clove garlic finely chopped
- salt and fresh ground pepper

Preparation
Step 1
Preheat oven to 350 degrees. Combine olive oil and seasonings. Rub the mixture into the pork loin. Place pork loin, fat side up, on a rack in an uncovered roasting pan. (Or I just place it in a pan, and add a little water on the bottom of the pan, so it won't stick). Roast 2.5 hours or 35-45 minutes per pound. (185 degrees on a meat thermometer). Serve with apple sauce.
