Crockpot Chicken Curry (THM)

My variation on recipe found in Trim Healthy Mama book. KC

Ingredients

  • 2 large onions, sliced
  • garlic cloves, peeled
  • 3-4 pounds boneless chicken breasts or thighs
  • sea salt
  • black pepper
  • curry powder
  • turmeric powder
  • 1-2 cups coconut milk
  • veggies such as broccoli & cauliflower florets (I use frozen mixture of broccoli, cauliflower & carrots)

Preparation

Step 1

Place sliced onion & whole garlic cloves in bottom of crock pot. Lay chicken pieces on top. Pour in Coconut milk. Sprinkle with desired seasonings. Top with vegetables.
Cook on High 3-4 hours or Low about 6-7 hours, or until done.
Sauce can be thickened up at the end with glucomanan powder or guar gum if desired.
