Ingredients

  • Vegetable shortening
  • 2 cups plain yellow cornmeal (not self rising)
  • 1 Tablespoon sugar
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 egg, beaten
  • 1 1/4 cup whole milk
  • 3 tablespoons vegetable oil

Preparation

Step 1

1. Preheat oven to 475. Generously grease 12 muffin tin cups with vegetable shortening
2. In a medium bowl, combine the cornmeal, sugar, baking powder, salt. Stor well. Add the egg, milk and oil, stir the batter well with a spoon.
3. Pour the batter into the prepared muffin cups, filling about half full. Bake for 18 minutes, until muffins are puffed and browned.
