Crispy Bok Choy Slaw

Ingredients

  • 2 tablespoons rice vinegar
  • 3 teaspoons toasted sesame oil
  • 1 teaspoon sugar
  • 1 teaspoon Dijon mustard
  • 1/8 teaspoon sea salt
  • 3 cups very thinly sliced bok choy
  • 1 medium carrot, trimmed
  • 2 green onions, thinly sliced

Preparation

Step 1

In a small bowl, whisk together first 5 ingredients (vinegar through sea salt) until sugar has dissolved. In a large bowl, combine remaining ingredients; add dressing and toss.
