Ingredients

    medium Vidalia onion finely diced

  • 2

    tbsp butter

  • 2

    lbs fresh sea scallops

  • 3

    tbsp all-purpose flour

  • 3

    tbsp bread crumbs

  • 2

    tsp salt

  • 1/2

    tsp freshly ground pepper

  • 1

    egg beaten

  • 1/2

    cup finely chopped fresh chives

  • 1/2

    cup chopped fresh cilantro leaves

  • 1

    tbsp fresh lime juice

  • 1

    tbsp graed fresh ginger

  • 2

    tbsp vegetable oil

  • 12

    mini burger buns or small soft dinner rolls

  • CILANTRO-LIME MAYO:

  • 4

    tbsp fresh lime juice

  • 1

    garlic clove peeled

  • 1/2

    tsp hot sauce (tabasco)

  • 1

    tsp dijon mustard

  • 1

    cup fresh cilantro leaves

  • 1

    cup mayonnaise

  • salt & fresh ground pepper

Directions

In a small skillet saute onion in butter over medium heat until translucent. Cool Place scallops in food processor and pulse until coarsely chopped or chop by hand. Transfer to a large bowlan add remaining ingredients, excpt vegetable oil. Add in the cooled onions. Cooks note: Mixture should not be to loose. If necessary, add a bit more flour or another egg. Shape the mixture into small burgers, aproximately 2 inch in diamter. Place on wax paperlined sheet tray. cover with plastic wrap and chill for at least 1 hr. Heat 2tbsp veg. oil ina skillet over med. heat. Add Scallops sliders and cook until browned and cool through. Serve on rolls with Cilantro Mayo. CILANTRO MAY: Blend all ingredients in foo processor except mayo and salt and pepper. Process until cilantro is fine. Add mayo and process just until blended. Season with salt and pepper to taste.
