Amaretti Cookies

Ingredients

  • 3 eggs, separated
  • 300 grams caster sugar
  • 500 grams almond flour, whole blanched, very finely ground
  • Icing sugar
  • Silver dragees

Preparation

Step 1

In a large bowl beat the egg yolks, gradually add sugar, whisking until well combined.

Add the almond flour, whisk to just combine (do not overmix).

In a separate bowl, with a whisk, beat the egg whites to barely a soft peak, do not overmix.

Fold one-third of the egg whites into the almond mixture, this will loosen the almond mixture. Fold in the remaining egg whites just to combine, do not over mix.

Cover and chill for at least one hour or overnight.

Preheat oven to 325 degrees. Roll dough into 13 grams (1/2 ounce) balls, coat in icing sugar and place a dragee in the centre. Do not flatten. Roll 20 amaretti per baking sheet. Chill dough in between baking times.

Bake until lightly golden, about 25-30 minutes.
