tomato, squash and feta

  • 6 oz. zucchini sliced
  • 6 oz. yellow squash
  • 2 scallions chopped
  • 1 1/2 teas. chopped garlic
  • 1 1/2 teas. oregano chopped
  • 2 oz. feta cheese
  • 12 oz. tomatoes sliced
  • 2 teas. olive oil
  • salt and pepper



Step 1

Pre heat oven t0 400. Oil a 6 inch ovenproof dish or saute pan.

Mix Zucchini with oil salt and pepper and layer in pan slightly overlapping. Top with a layer of tomatoes, slightly overlapping them. Sprinkle with part of scallion mix. Sprinkle with feta. Make next layer with yellow squash. Drizzle with olive oil. Place in oven for 30 min. or until slightly browned. Allow to set for 10 min.
