Ingredients
- 4 skinless, boneless chicken breast halves cut into 1" pcs
- Salt
- Ground black pepper
- 2 cloves garlic, minced
- 1 can (15oz) diced tomatoes, drained
- 1 bag (5oz) baby spinach
- 2 cups thinly sliced mushrooms
- 1/2 cup Parmesan cheese, grated

Step 1
Season chicken with salt and pepper.
Coat large nonstick skillet with cooking spray and place over medium heat. When hot, add chicken and cook 5 to 10 minutes, or until it's no longer pink and juices run clear. Remove chicken to plate and cover to keep warm.
Add garlic to pan. Cook 2 to 3 minutes, or until fragrant. Add tomatoes, spinach, and mushrooms. Cook about 3 minutes, or until liquid is reduced by half.
Place chicken back in pan. Stir, adjusting seasoning, if necessary. Sprinkle with cheese just before serving.
