Amaretti

Ingredients

  • 1 cup blanched almonds
  • 3/4 cup and 3 tbs. icing sugar
  • 1 tsp. flour
  • 2 egg whites
  • 1/3 cup granulated sugar
  • 1/2 tsp. almond extract

Preparation

Step 1

Preheat oven to 300 degrees.

Grind almonds with 3 tbs. icing sugar to a fine powder. Mix nuts with remaining icing sugar and flour. Set aside.

Beat egg whites, slowly and add granulated sugar until stiff and shiny peaks. Fold nuts and extract into beaten whites until blended. Spoon the cookie mix into a pastry bag and shape. Bake 40 - 45 minutes until very lightly browned. Turn off the oven and allow the cookies to cool in over for 20 - 30 minutes.
