Pumpkin Roll

Ingredients

  • Sift together:
  • 3 eggs (beat for 5 min on med speed)
  • 1 c sugar
  • 3/4 c of cooked mashed pumpkin
  • 3/4 c self rising flour
  • 1 T and 1 t cinnamon
  • 1 t ginger
  • 1/2 t nutmeg
  • Cream Cheese Filling:
  • 8 oz cream cheese (at room temp)
  • 1 c powdered sugar
  • 2 T butter (room temp)
  • 1 t vanilla

Preparation

Step 1

Beat eggs, sugar and pumpkin together. Add dry ingredients and mix until blended. Grease and flour a jelly roll pan and pour mixture in evenly.
Bake 375* for 15 min.
At once turn onto a dish towel that has been sprinkled with powdered sugar. Roll up towel and cake and allow to cool completely. Unroll, spread with cream cheese filling and roll up again. Sprinkle top with powdered sugar. Refrigerate until served.
