Almond Butter Cookies

Ingredients

  • Frosting:
  • 3/4 cup butter, softened
  • 1/2 cup sugar
  • 1 egg
  • 1 tsp. almond extract
  • 2 cups plain flour
  • 2 tbsp. butter, melted
  • 1-1/4 cups powdered sugar
  • 1 tsp. almond extract
  • 1-2 tbsp. milk
  • sliced almonds

Preparation

Step 1

Preheat oven to 350 degrees. Beat butter and sugar in a large bowl until creamy. Add egg and almond extract. Gradually add flour. Roll dough into 1" balls. Place 2" apart on a greased baking sheet. Dip a flat bottomed glass in sugar and flatten balls. Bake 10-12 minutes until bottom of cookies are golden brown. Cool 1 minute on baking sheet then remove to wire racks to cool completely.

Frosting: Combine butter, sugar and almond extract until smooth. Stir in milk, as needed until frosting in spreading consistency. Spread on each cookie. Top with almond slice.
