Raised Doughnuts

Ingredients
- 2 Pkg. yeast (dissolved in 1/3 cup lukewarm water & 1/2 tsp. sugar)
- 1 1/2 cup scalded milk
- 1/2 cup shortening
- 1 cup mashed potatoes (warm)
- 1 tsp. salt
- 2 eggs (beaten)
- 1 cup sugar (add to eggs & beat)
- 1 tsp. vanilla
Preparation
Step 1
Mix the above mixtures. Add 4 cups of flour and beat. Make a pond on the counter with 4 cups of flour. Pour dough in pound and knead until not sticky. Place in large bowl, cover, and let rise until double. Punch down, by taking the sides and going toward the middle. Then turn up side down to rise double again. Then roll out onto floured surface and cut with a doughnut cutter. Let rise while you're getting the oil hot for deep fat frying and getting the glaze made. Place wax paper on two cookie sheets (one for just after frying and the other one for the glazed ones).
