Ingredients
- 1/4 cup ancho chili powder
- 1/4 cup espresso
- 2 TBL. paprika
- 2 TBL. dark brown sugar
- 1 TLB dry mustard
- 1 TBL. kosher salt
- 1 TBL. black pepper
- 1 TBL. ground coriander
- 1 TBL. dried oregane
- 2 teas. ground ginger
- 2 teas. chili de arbol powder

Preparation
Step 1
Preheat oven to 425 degrees
Preheat a cast iron pan over high heat. Brush each side of the steak with oil and then season each side liberally with salt and pepper. Rub 2 TBL. of coffee rub on one side. Cook the steak rub side down for about 3 to 4 min. Flip the steak over and cook for 2 min. and transfew to a baking sheet and cook in the oven for about 8 to 10 min. Remove and let stand 5 min.
