Smoky Scalloped Potatoes

Ingredients

  • 3 tbs unsalted butter
  • 1 small shallot, chopped
  • 4 garlic cloves, minced
  • 1 tbs flour
  • Kosher salt & pepper
  • 3 cups half & half
  • 1-2 tsps smoked paprika
  • 2 1/2 lbs russet potatoes, peeled & thinly sliced
  • 1 cup grated sharp white cheddar cheese
  • 1/3 cup freshly grated parmesan cheese

Step 1

Preheat oven to 350. Butter a 9X13 casserole dish with 1 tbs butter. Melt the remaining 2 tbs butter in large saucepan. One the butter foams, add the shallot and garlic an saute until softened, 3-4 minutes. Add the flour and cook, stirring frequently until golden, about 2 minutes. Season with S&P and add the half-and-half, smoked paprika and potatoes. Bring to a low simmer and cook for 5 minutes.
Pour half of the potato mixture into the buttered casserole dish. Shake the pan ti arrange the potatoes in a singe layer. Sprinkle half of each of the cheeses on top of potato layer, add remaining potatoes, shake again and top with cheese, cover with foil and bake 45 minutes. Remove the foil and place back in the oven for another 15 minutes until potatoes & cheese are golden & browned. Let stank 15 minutes before serving.
