Pumpkin Roll

  • Filling:
  • 3 eggs
  • 2/3 cup pumpkin
  • 3/4 cup flour
  • 1 cup sugar
  • 1/2 tsp. cinnamon
  • 1 tsp. baking soda
  • 8 oz cream cheese
  • 1 tsp. vanilla
  • 1 cup powdered sugar
  • 1 T. oleo



Step 1

Mix all ingredients. Pour into a 10x15 inch jelly roll pan lined with greased wax paper. Half cup nuts may be sprinkled on top before baking. Bake for 15 minutes at 375 degrees. While baking prepare filling:

Blend ingredients well. When pumpkin roll is baked, immediately turn onto towel sprinkled generously with powdered sugar. Peel off waxed paper and spread with filling. Roll and wrap with waxed paper.
Refrigerate until ready to serve.
