Ingredients

  • 1/2

    C Buckwheat Flour

  • 1/2

    C Old-fashioned Rolled Oats

  • 1/2

    C Cornmeal

  • 1

    t. baking powder

  • 1/2

    t. baking soda

  • 1

    Ripe Banana

  • 2

    T vinegar

  • 3

    T Maple Syrup

  • 2

    C oat, almond or nonfat soy milk

Directions

Mix buckwheat flour, oats, cornmeal, baking powder and baking soda in a bowl. Mash the banana in another bowl and add vinegar, maple syrup and milk. Stir and add to dry ingredients. Heat a nonstick pan on medium high. When water sizzles on the pan, it is ready for the pancakes. Cook until bubbles form. Flip, cook another few minutes on the other side and enjoy eating plain or with fruit or maple syrup. If some of recipe is left over, make muffins. Add raisins and bake in a 350 degree oven for 20 minutes.
