(16oz) pkg dried black eyed peas
oz salt pork
large onion, chopped
t bacon drippings
jalapeno pepper, cooked and diced (optional)
Garnishes: chopped green onions, chopped crumbled
Rinse and sort peas according to pkg directions and soak in water 6-8 hours. May use quick soak method(Cover peas with 2 inches of cold water and bring to a boil, boil 1 minute. Remove from heat and cover. Let stand 1 hour. Drain and rinse). Bring salt pork and 1 Qt water to a boil over medium heat; reduce heat to med-low and simmer 30 minutes. Add peas, onions and next 2 ingredients, water to cover and if desired jalapeno pepper.Bring to a boil over med-high heat, cover , reduce heat and cook occasionally 1-1 1/2 hours or until liquid thickens and peas are tender. Uncover after 1 hour to allow liquid to evaporate if needed. Season with salt and pepper.
