Big muffins made in larger muffin pans. I also line the pans. Had to order the paper baking cups on line. couldn't find them local. If you love pumpkin these are yummy.

Ingredients

  • 3 cups all-purpose flour
  • 2 tbs & 2 tsp pumpkin pie spice
  • t tsp baking soda
  • 1 &1/2 tsp salt
  • 3 cups granulated sugar
  • 1 can(15 ounce) pumpkin, not pie filling
  • 4 large eggs
  • 1/2 cup raisins
  • 1/2 cup chopped walnuts
  • 1/2 cup vegetable oil
  • 1/2 cup water

Step 1

Preheat oven to 350
Line muffin cups or you can grease them.
Combine Flour, pumpkin pie spice, baking soda and salt in large bowl
In mixer bowl, combine sugar, pumpkin, eggs, oil and water then beat just till blended.
Add flour mixture, raisins and walnuts. Stir just until moistened.
Fill muffin cups 3/4 full.
Bake for 32 to 35 minutes.
Cool in pans on wire racks for 10 minutes then remove from pans.
