- 1/3 cup brown sugar
- 1 teaspoon cinnamon
- 4 bananas
- 3 tablespoons orange juice
- 4 tablespoons butter
- 1/4 teaspoon rum extract
- 4 scoops vanilla ice cream

Combine brown sugar and cinnamon in a small bowl and mix well.
Cut bananas in half crosswise, then in half lengthwise. Brush with orange juice, reserving remaining orange juice.
Melt butter in large skillet over medium heat. Add the brown sugar mixture and reserved orange juice.
Cook the mixture, stirring continually, until thickened, about 5 minutes. Stir in rum extract. Add bananas and stir gently to coat. Remove from heat.
Place 4 banana quarters in each of 4 small serving bowls. Top each with a scoop of ice cream. Drizzle with remaining sauce.
