Ingredients
- 1/4 cup pumpkin seeds (or walnuts)
- 3 tbsp apple cider vinegar
- 1 tbsp dijon mustard
- 2 tsp. pure honey
- 1/4 cup extra virgin olive oil
- 3 ripe red pears, cored and thinly sliced
- 2 pkgs. (5 oz. each) mixed baby greens
- salt and pepper

Preparation
Step 1
In small bowl, with wire whisk, stir vinegar, Dijon, and honey until blended. Continue whisking and add oil in slow steady stream. Whisk until well blended and emulsified. Dressing can be made ahead. Cover tightly and refrigerate up to 3 days.
In large bowl combine sliced pears, greens, nuts, dressing, salt, pepper. Toss until evenly coated.
About 100 calories, 1 g protein, 9 g carbohydrate, 7 g total fat, 2 g fiber, 0 mg cholesterol, 85 mg. sodium.
