Toasted Whole Spice Rub
Good with Duck, Game Hen, and Pork.
- 2 cinnamon sticks
- 8 cardomom pods
- 1/2 cup coriander seeds
- 1/4 cup white peppercorns
- 1/4 cup cumin seeds
- 1 tablespoon whole cloves
- 1 tablespoon whole allspice berries
- 2 small dried red chile peppers
- 4 whole star anise

Cooking time 17mins
Combine in a large skillet and toast over medium heat, shaking the pan often to prevent burning, until fragrant, 2 to 3 minutes.
Remove from heat and let cool to room temperature, then grind to a fine powder.
