baked acorn squash

  • 1/3 cup butter
  • 2 acorn squash (1 lb each)
  • 1/2 cup fine bread crumbs
  • 1/3 cup chopped walnuts
  • 3 tablespoons packed brown sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon nutmeg

Step 1

melt butter in microwave on high for 1 min. wash squash and pierce with fork. Cook on high in microwave for 2 min. cut in half lenghwise and remove seeds and fibers. place cut side down in a 12x7x2 inch microwave baking dish, cook on high for 6 min. while cooking add remaining ingredents to the melted butter and mix well. Turn squash cut side up. divide butter mixture among 4 halves. cook covered on high for 6-8 min or until tender
