Light, Lumpy Dumplings for Chicken Pot Pie
- 2 cups flour
- 1 Tbs baking powder
- 1/2 tsp salt
- 2 Tbs chopped parsley
- 1/4 cup solid white vegetable shortening
- 1 cup milk
Mix together flour, baking powder, salt, and parsley in a large bowl.
With a pastry blender, cut in the shortening until the mixture resembles coarse crumbles.
With a fork, lightly mix in the milk to form a soft dough, stirring as little as possible.
Drop dough by heaping tablespoon (serving spoon) onto simmering stew. Simmer dumplings uncovered for 12 minutes. Cover and simmer for an additional 12 minutes.
