Ingredients

  • 2 cups drained black beans
  • 3 cans whole kernel corn (or equivalent from fresh corn ears, or mix of both)
  • 1/2 cup chopped fresh cilantro
  • 3 Tblsp fresh lime juice
  • 6 Tblsp vegetable oil
  • 1/4 cup minced red onion
  • 1/4 cup minced green onion
  • 1.5 tsp ground cumin
  • 3/4 cup chopped tomatoes
  • Salt & Pepper to taste

Step 1

Mix first 8 ingredients in large bowl. Season with salt and pepper to taste. Cover and refrisgerate until cold.
