Combine all ingredients (except powdered sugar) in a bowl, beating until smooth. Heat 1/4 inch oil to 375 in a skillet (or use a hot oil fryer like Fry Daddy). To make a funnel: Pour the batter into a zip loc freezer bag; cut corner tip of bag, holding batter away until ready to add to hot oil. Pinch until ready; release batter, moving funnel in a slow, circular motion to form spiral. Then criss-cross that. Be careful of amount of batter used; it rises and expands. Fry each funnel cake 1 minute or until edges are brown; turn and fry other side. Drain on paper towel; sprinkle with powdered sugar.
