Blueberry Muffins

  • 1 C whole-wheat flour
  • 1 C oat flour
  • 1 t. baking powder
  • 1/2 t. baking soda
  • 1 t. ground cinnamon
  • 1/2 t. ground nutmeg
  • 1/3 C maple syrup or honey
  • 1/2 C unsweetened applesauce
  • 2 t. vanilla extract
  • 1 C oat milk
  • 1 C blueberries, fresh or frozen



Step 1

Preheat oven to 400 degrees. Mix first six ingredients in a large bowl. Place remaining ingredients in the center. Carefully fold from center to outside until all ingredients are blended. Do not overstir. Spoon batter into a nonstick muffin pan - spray with vegetable spray if need. Bake for 25 minutes or until tops are brown.
