Ingredients
- 6 ounces white chocolate, coarsely chopped
- 1 pkg. plain white cake mix
- 2/3 cup water
- 1/3 cup oil
- 3 eggs
- 2 tbs. fresh lemon juice
- 1 tsp. grated lemon zest
- Lemony White Chocolate Cream Cheese Frosting
- 1/2 cup lemon curd
Preparation
Step 1
Place a rack in the centre of the oven and preheat to 350 degrees. Grease two 9 inch round cake pans.
Melt the white chocolate; and stir until smooth.
Place the cake mix, water, oil, whole eggs, egg whites, lemon juice, and lemon zest in a large mixing bowl. Pour in the slightly cooked white chocolate. Blend with a mixer on low speed for 1 minute. Stop and scrape down the sides again.
Bake until the cakes are golden and spring back, about 28-32 minutes.
