Ingredients
- 4 cups sugar
- 2 cups margarine or butter
- 32 oz ricotta cheese
- 4 tsp vanilla extract
- 4 eggs
- 4 cups all purpose flour
- 4 tablespoons baking powder
- 2 teaspoons salt

Preparation
Step 1
Preheat oven to 350 degrees F.
In a large bowls, with mixer at low speed, beat sugar and margarine until blended. Increase speed to high to; beat until light and fluffy, about 5 minutes. At medium speed beat in ricotta, vanilla,and eggs until well combined.
Reduce speed to low. Add flour,baking powder, and salt; beat until dough forms. Drop dough by level tablespoons about 2 inches apart, on ungreased large cookie sheet until lightly browned. cool on rack and ice.
