cups Mashed Bananas (approx. 4)
tsp Lemon Juice
cup Shortening (or vegetable oil)
cup Chopped Nuts
Preheat oven to 350ºF Lightly grease 2 loaf pans. Combine dry ingredients and set aside. In separate bowl or measuring cup, combine bananas and lemon juice and set aside. Cream shortening and sugar in a large bowl until fluffy. Add eggs and beat until fluffy. Add dry ingredients alternately with milk and beat to combine. Fold in bananas and nuts. Bake at 350ºF for 60 minutes or until tester comes out clean. Cool in pan for 10 minutes then on rack. Wrap and store in a cool place or freeze. Can also make 2 ½ dozen muffins and bake them approx. 20 minutes.
