Mushrooms in Garlic and Wine Sauce

Ingredients

  • 3 lbs.quartered porcini mushrooms
  • 3 T. olive oil
  • 6 garlic cloves minced
  • 1 finely chopped red onion
  • 1/4 t. crushed red pepper
  • 1/2 c. -1 c. red wine
  • 1/2 t. salt
  • 1/8 t. ground pepper
  • 2 T. fresh rosemary, chopped

Preparation

Step 1

1. Saute onion and garlic in olive oil over low heat. Add crushed red pepper. Cook until garlic begins to turn a light brown.
2. Increase the heat and add mushrooms and saute for 1-2 minutes.
3. Add wine, salt and pepper. Cover and cook for two minutes. Uncover, and cook for an additional 2 minutes.
4. Top with chopped rosemary and serve.
