NEW ENGLAND POT ROAST IN CROCKPOT

Place meat and vegetables in a crock-pot and run errands or do last-minute Christmas shopping while your dinner cooks itself. Top sirloin is a filling but lean meat, and your vegetables cook alongside the meat in the slow cooker. It's a hot and hearty meal for less than 400 calories

- 1/2 cup flour
- 1 can (14 ounces) beef broth
- 3 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1 teaspoon ground black pepper
- 2 1/2 pounds boneless beef chuck roast or top sirloin roast
- 1 bag (12 ounces) precut carrot and celery sticks
- 1 cup prechopped onion
- 1 pound small prescrubbed new potatoes
- prepared horseradish

Step 1
Coat the inside of a 5- to 6-quart slow cooker pot with cooking spray. Place the flour in the pot. Add the broth gradually, whisking constantly, until smooth. Add the tomato paste, thyme, salt, and pepper.Whisk to combine. Place the beef, carrot and celery, onion, and potatoes into the pot. Spoon some of the sauce over the beef. Cover and cook on the low-heat setting for 8 to 9 hours, or until the beef is fork tender. Serve with the horseradish. 2. Note: New England Pot Roast can also be cooked on the highheat setting for 4 to 4 1/2 hours.
