Crockpot Mashed Potatoes

These are a great way to make mashed potatoes for the holidays. JUst put them in the crockpot. Give them a smash when you think about it and viola! Potatoes when dinner is ready instead of dinner when the potatoes are ready!

Ingredients

  • 8 oz sour cream
  • 8 oz cream cheese
  • Pepper to taste
  • salt to taste
  • garlic
  • 5 lbs red potatoes, I prefer skins on
  • bacon bits
  • green onions
  • parmesan cheese

Preparation

Step 1

Rinse potatoes. Boil in chicken broth with garlic cloves for about 10 minutes. Potatoes should still be softened but still firm. Drain. Put potatoes into crock pot with sour cream and cream cheese. Salt and pepper to taste. (I actually find that the sour cream/cream cheese amounts are a bit much and recommend starting with less and adding more if you choose.) Add bacon and green onions an hour or so before serving. Add cheese 15 minutes or so before serving. Enjoy.
