- 1 cup uncooked long grain rice
- 3 tbsp oil
- 2 eggs
- 3 tbsp soy sauce
- 1/2 cup chopped, cooked shrimp
- 1/2 cup chopped green onion
Cook rice, drain, rinse and cool.
Heat oil in large skilled or wok on medium high heat. Break eggs into oil and scrample with spatula. Add rice and soy sauce. Stir until heated and eggs are cooked. Add shrimp and onions and cook 1 minute.
