Ingredients
- Cornstarch mixture:
- 3 lbs. chicken
- 1 Tbsp. Hawaiian salt (rock salt)
- 1 beaten egg
- 1/2 tsp. salt
- oil for frying, one inch deep
- 2 c. cornstarch
- 1/2 c. flour
- 1 Tbs. garlic salt
- 1 tsp. pepper
Preparation
Step 1
Rub salt all over chicken and let set for 30 minutes.
Heat oil in large heavy skillet on medium high heat.
Combine cornstarch mixture in plastic bag. Mix egg and 1/2 tsp. salt together. Dip chicken in egg. Place in flour mixture and shake well until coated.
Place skin side down in the skillet. Turn chicken over after 10 minutes when brown and cook until done about another 10 minutes. Test for doneness before removing from oil. Drain on paper towel.
