EGG CASSEROLE

SERVE WITH TOAST ON THE SIDE OR OVER TOAST. ADD A FRUIT SALAD TO COMPLETE.

Ingredients

  • TOPPING:
  • 8 bacon slices
  • 3 tbsp all purpose flour
  • 1/4 tsp dried sweet basil
  • 1/4 tsp ground thyme
  • 1/8 tsp garlic powder
  • 1/4 tsp parsley flakes
  • 1/4 tsp salt
  • 1-1/2 cups milk
  • 1-1/2 cups grated medium or sharp cheddar cheese
  • 8 hard-boiled eggs, thinly sliced
  • 2 tbsp butter or hard margarine
  • 1/2 cup dry bread crumbs

Preparation

Step 1

Saute bacon until crispy. Cut or crumble into small pieces. Set aside.

Mix next 6 ingredients in saucepan.

Add milk, a little at a time, while mixing well so no lumps remain. Heat and stir until mixture boils and thickens.

Add cheese. Stir to melt. Remove from heat. Spoon enough sauce into greased 8x8 inch casserole just to cover bottom. Add layer of 1/2 egg slices.
Sprinkle with bacon. Spoon over 1/2 remaining sauce. Add layer of second 1/2 egg slices. Cover with remaining sauce.

TOPPING: Melt butter in saucepan. Add bread crumbs. Stir. Spread over top. Bake, uncovered, in 350 oven for about 30 minutes until bubbly hot.
