Ingredients

  • 10 medium tomatoes, peeled, seeded & diced
  • 1/2 cup sliced fresh basil
  • 6 large garlic cloves, unpeeled
  • 1/2 cup plus 1 tbs olive oil
  • 3/4 cup chopped fresh oregano of 1/4 tsp dried
  • 3/4 tsp chopped fresh thyme or 1/4 tsp dried
  • Peasant bread
  • 6 oz. goat cheese

Preparation

Step 1

Combine tomatoes & 1/4 cup basil in colander. Sprinkle generously with S&P & toss, let drain 1 hour tossing occasionally. Meanwhile coat garlic in oil and roast at 375 for 15-20 minutes. Cool, peel & chop. Combine garlic and remaining 1/2 cup oil in bowl. Mix in remaining 1/4 cup basil, oregano & thyme. Add tomato mixture & blend. Season with S&P.
Toast bread, spread with goat cheese & top with tomato mixture.
