Ingredients

  • 4 C. lukewarm water
  • 3 Tblsp. sugar or 4tsp. honey
  • 2 Tblsp. Shortening (unsalted)
  • 2 Tblsp. salt
  • 2 cakes or packets yeast
  • 3 qts. (12 C.) flour

Step 1

Mix everything except flour. Add approx. 1/3 flour, mix well. Add flour gradually and knead until dough is elastic and not sticking to hands or board. Place in greased bowl and allow to rise until double in bulk, approx. 2 1/2 hours. Punch or knead down, allow to rise a 2nd time, approx. 1-1 1/2 hours. Make into loaves about 1/2 full, and place in greased pans, (metal is best). Allow to rise until about even with top of pans, and prick with fork, holes in top ( I don't always do this). This allows air to escape and less likely to have holes. Bake at 325-350 for 35 -45 min. To check, tap on bottom and if it seems hollow, should be ready. Rubbing with butter upon removing from oven keeps crust soft.
