Sante Fe Chicken Stoup

Ingredients

  • 2-3 boneless, skinless chicken breasts cut into bite size pieces
  • 1 onion, diced
  • 1 red pepper, diced
  • 1 can chili beans
  • 1 can sweet corn, drained
  • 1 can enchilada sauce
  • 1 package taco seasoning
  • 3/4 cup sour cream
  • 1/2 cup ketchup
  • Shredded cheese for topping

Preparation

Step 1

Cook chicken, onion, and red pepper in a pot on medium heat until chicken is cooked through.

Add chili beans, corn, enchilada sauce, taco seasoning, sour cream, and ketchup. Stir well.

Let simmer for at least 30 minutes…the longer it simmers, the better!
