Ingredients

  • 1/4

    C red wine vinegar

  • 3/4

    C water

  • 1/3

    C dried apricots, chopped

  • 1/3

    C dried tart cherries

  • 3/4

    C orange juice

  • 1

    t. ground cumin

  • 1/8

    t. cinnamon

  • 3/4

    t. salt

  • 1/8

    t. freshly groound black pepper

  • 1

    C whole wheat couscous

  • 1/4

    C salted dry roasted pistachios, chopped

  • 1

    scallion, chopped

  • 2

    T fresh mint

  • 2

    t. olive oil

Directions

Combine vinegar and 1/4 C of the water in small saucepan over high heat. Bring to a boil, then remove from heat and stir in apricots and cherries. Let stand for 10 minutes, then drain. Combine orange juice, cumin, cinnamon, salt, pepper and remaining water in medium saucepan over high heat. Bring to a boil. Remove from heat and stir in couscous. Cover and let stand 5 minutes. Transfer to serving bowl and stir in apricots and cherries, pistachios, scallion, mint and oil.
