Ingredients

  • 1

    and ⅔ cups pumpkin

  • 4

    eggs (yolks and whites separated)

  • 1

    cup sugar

  • 2

    Tbls. flour (heaping)

  • 1

    tsp. cinnamon

  • 1

    tsp. allspice

  • ½

    tsp. nutmeg

  • ½

    tsp. ginger

  • cups half and half

Directions

Blend pumpkin and egg yolks. Stir together sugars, flour and spices. Blend together with pumpkin and egg yolks. Whip egg whites until stiff but not dry. Add cream to pumpkin mixture, and then fold in egg whites. Bake at 400 until top starts to brown (approximately 30 minutes). Then lower oven to 350 and bake until done. (Check with a toothpick.)
