Southern Yam Dessert Squares

Ingredients
- 2 cups quick-cooking oats
- 1 1/2 cups flour
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1 cup margarine, softened
- 1 cup firmly packed brown sugar
- 1 tsp. vanilla
- 1 pound yams or sweet potatoes, cooked, peeled, and mashed (about 2 cups)
- 1 can of condensed milk (Eagle Brand)
- 2 eggs, beaten
- 1 1/2 tsp. allspice or pumpkin pie spice
- 1 tsp. grated orange rind
- 1/2 cup chopped nuts
- Tip: 1 (16 oz or 8 oz) can sweet potatoes, drained and mashed or 1 can pumpkin can be substituted for yams

Step 1
Preheat oven to 350. Combine oats, flour, baking soda, and salt; set aside. In large mixer bowl, beat margarine, sugar and vanilla until fluffy. Add dry ingredients; mix until crumbly. Reserving 1 cup crumb mixture, press remainder firmly on bottom of 13 x9 inch pan.
Bake 10 minutes. Meanwhile in large bowl, combine remaining ingredients except nuts; mix well. Pour over prepared crust. Combine nuts with reserved crumb mixture; sprinkle evenly over top. Bake 25 to 30 minutes or until golden. Cool. Serve warm or chilled. Serve with vanilla ice cream if desired. Refrigerate leftovers.
