Ingredients
- 1.5 lbs Chicken cutlets
- 2 Eggs
- 1 cup Bread crumbs
- 4 tbsp flour
- 1/2 tsp salt
- 1/2 pepper
- lemon juice
Preparation
Step 1
Pound cutlets to 1/8 in thick
In a shallow dish combine flour, salt, pepper
Place eggs and bread crumbs in separate shallow dishes
Lightly coat cutlets in coating mixture
Dip cutlets into egg; drain slightly
Coat in bread crumbs
In large non-stick skillet heat 1/2 of butter and oil over medium-high heat
Add 1/2 of cutlets; cook 4 min, remove and keep warm
Repeat for second half
Sprinkle with Lemon juice, salt, pepper to taste
