Wild Rice Stuffing

My mom's had this stuffing recipe for years, and it's always been one of my favorites. It's got pure wild rice mixed with onions and mushrooms. It can be used as a side dish or as a stuffing.

Ingredients

  • Rice:
  • 3/4 c. raw wild rice
  • 1 tsp. salt
  • large pan of boiling water
  • Chicken bouillon
  • Stuffing:
  • 1/2 lb. sliced mushrooms
  • 1/4 c. butter
  • 1/4 c. minced onions
  • pepper to taste
  • 3/4 tsp. salt
  • 2 c. cooked rice (above)
  • 1/4 c. minced parsley
  • 1/2 c. chopped celery (optional)

Preparation

Step 1

Rice:

Wash rice with 3 or 4 changes of cold water to remove all the foreign particles. Add fresh water and salt to pan and boil for 20 minutes.

Drain rice and add fresh water (measure the amount) and add chicken bouillon for amount of water added. Bring to a boil and cook until rice has “popped” open (~15-20 minutes). Drain.


Stuffing:

Cook mushrooms in butter for 5 minutes. Remove mushrooms; add onions, parsley and celery; cook until onions are yellow. Add rest of ingredients; simmer 15 minutes. Enough for a 4 pound chicken or serve as a side dish.

Marcia’s Notes: I cook the mushrooms, onions and parsley together. I have never used celery and I have never put it in a chicken.
