Quinoa with Caramelized Onions and Mushrooms

Ingredients
- 1 cup(s) quinoa, dry
- 1 1/4 cup(s) broth, chicken, less sodium, (or vegetable)
- 2 large onion(s), yellow, thinly sliced
- 1 package(s) mushrooms, 8 oz., (cremini/baby bella or white button)
- 1/4 teaspoon salt, Kosher
- 1/4 teaspoon pepper, black

Step 1
Thoroughly rinse the quinoa under cold water (use a colander lined with a dishcloth or heavy duty paper towels). Drain. Add the broth to a medium saucepan and bring to a boil over high heat. Stir in the quinoa, reduce the heat to low, cover the pan, and simmer for 12 to 15 minutes, or until all the broth has been absorbed. Remove the pan from the heat, fluff the quinoa with a fork, replace the cover to keep warm and set aside.
In a skillet liberally sprayed with oil, cook the onions until caramelized to a deep brown color (about 25-35 minutes). Add the mushrooms and sauté another 5 minutes. Season with salt and pepper. Add the quinoa to the onion-mushroom mixture and stir to combine. Garnish with parsley (if using).
